INGREDIENTS

4 slices bacon, chopped

6 ears sweet corn, husked and kernels removed

1 cup red onion

1 jalapeno, seeded and minced

1 teaspoon kosher salt

¼ teaspoon ground black pepper

PREPARATION

STEP 1

In a large sauté pan over medium heat, cook bacon until rendered and lightly crisp, about 5 minutes. Add corn, onion, jalapeno, salt, and pepper.

 

STEP 2

Sauté, while stirring frequently, for an additional 8 to 10 minutes until corn is cooked but still slightly firm.

 

STEP 3

Taste and add additional salt or pepper, as needed.

 

Note: Main dish serving suggestions: grilled chicken, fried fish, tacos, ribs, or other BBQ dishes.
