6 slices bacon
2 pounds fingerling potatoes, halved lengthwise
1 teaspoon kosher salt
½ teaspoon ground black pepper
3 ounces blue cheese, crumbled
2 teaspoons honey

PREPARATION
STEP 1
Preheat oven to 425°F. In a skillet over medium heat, cook the bacon, flipping frequently until golden and crisp on both sides—about 5 minutes. Then, transfer bacon to a paper-lined plate and reserve renderings.
STEP 2
In a large bowl, toss to combine the potatoes, 2 tablespoons bacon renderings (or canola oil), salt and pepper. Transfer the potatoes to a baking sheet and roast for 30 minutes, flipping about halfway through, and then roast for an additional 15 to 20 minutes until tender.
STEP 3
Crumble bacon into bite-sized pieces. Transfer potatoes to a serving dish and top with bacon, blue cheese and drizzle with honey before serving.
