BEER PAIRING

Pair with an American IPA like Terrapin Hopsecutioner

Blue cheese and savory bacon crumbles create a game-changing side dish that explodes with flavor. With a dish this intense, only a strong, rich beer like Terrapin Hopsecutioner will do.

LEARN MORE

Side dishes don’t get much more indulgent than fingerling potatoes roasted in bacon renderings and tossed with blue cheese crumbles, salty bacon and a drizzle of honey. Plus, when you pair these flavors with the piney and resiny hop character in Terrapin Hopsecutioner, you get a complementary complexity that wows with every bite.

Topics:
Sides

INGREDIENTS

6 slices bacon

2 pounds fingerling potatoes, halved lengthwise

1 teaspoon kosher salt

½ teaspoon ground black pepper

3 ounces blue cheese, crumbled

2 teaspoons honey

FOR SERVING:

Poultry, sliced

Steak, sliced

PREPARATION

STEP 1

Preheat oven to 425°F. In a skillet over medium heat, cook the bacon, flipping frequently until golden and crisp on both sides—about 5 minutes. Then, transfer bacon to a paper-lined plate and reserve renderings.

STEP 2

In a large bowl, toss to combine the potatoes, 2 tablespoons bacon renderings (or canola oil), salt and pepper. Transfer the potatoes to a baking sheet and roast for 30 minutes, flipping about halfway through, and then roast for an additional 15 to 20 minutes until tender.

STEP 3

Crumble bacon into bite-sized pieces. Transfer potatoes to a serving dish and top with bacon, blue cheese and drizzle with honey before serving.

Serving Suggestions: Pair with grilled or sautéed poultry or steak.
