INGREDIENTS
5 slices bacon
1 large onion, thinly sliced into rings
2 tablespoons water
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
3 cups milk, warmed
6 ounces Gouda cheese, shredded
1 teaspoon Worcestershire sauce
½ teaspoon salt
¼ teaspoon ground black pepper
⅛ teaspoon ground nutmeg
PREPARATION
STEP 1
In a large skillet over medium heat, cook bacon until cooked through and crisp, about 3 to 5 minutes per side. Transfer bacon to a plate. To the bacon renderings, add onion and reduce heat to medium-low. Cook onions, stirring occasionally, until golden brown, about 20 minutes. Add water, stir with a wooden spoon to remove any cooked bits from the skillet, and cook until water has reduced completely, about 1 minute. Remove from heat.
STEP 2
In a heavy-bottomed pot, melt butter over medium heat. Add flour, whisk until combined, and cook for 2 minutes. Increase heat to medium-high and whisk continuously while adding milk. Bring milk to a simmer then add cheese, Worcestershire sauce, salt, pepper, and nutmeg. Stir slowly until cheese is melted and mixture is smooth.
STEP 3
Chop bacon in to bite-sized pieces. Add bacon and onions to the cheese and stir. Transfer cheese dip to a warm serving dish and serve with toasted baguette slices or soft pretzels.
