INGREDIENTS

Vanilla Ice Cream

3 cups heavy cream

1 14-ounce can sweetened condensed milk

2 teaspoons vanilla extract or vanilla bean paste

⅛ teaspoon kosher salt

 

Grilled Pineapple

1 large pineapple, peeled and cored

8 tablespoons honey

PREPARATION

STEP 1

With an electric mixer, beat the cream on medium-high speed until stiff peaks form.

 

STEP 2

In another bowl, mix to combine condensed milk, vanilla and salt. Gradually fold this mixture into the whipped cream. Pour into a 9- x 5- x 3-inch metal loaf pan and cover with parchment paper or plastic wrap. Freeze until firm, about 4 hours.

 

STEP 3

Preheat grill to medium heat.

 

STEP 4

Slice pineapple into 8 rings. Place rings onto the grill grates and grill until slightly charred on both sides, about 2 to 3 minutes per side.

 

STEP 5

Scoop a serving of ice cream into a bowl and top with a warm pineapple ring. Drizzle with a tablespoon of honey and serve immediately.
