
Hard Cider Poached Pears

INGREDIENTS
24 ounces Crispin Pacific Pear
2 tablespoons honey
1 vanilla bean, halved lengthwise
3 Bosc pears, peeled, halved and cored
1 tablespoon unsalted butter
6 scoops vanilla ice cream
Ground cinnamon
PREPARATION
STEP 1
In a pot large enough to hold the pears, bring cider, honey and vanilla bean to a boil. Add pears, reduce heat to low and simmer for 8 to 10 minutes until fork-tender. Transfer pear halves to serving bowls.
STEP 2
Simmer the poaching liquid until reduced and slightly thickened. Whisk in butter.
STEP 3
Serve warm pears with a scoop of ice cream, a drizzle of the cider syrup and a dusting of cinnamon.
