A delicious, yet surprisingly light dessert calls for a bright, refreshing beer. And this Shandy does just that. The grapefruit heightens the orange zest and juice used in the cake, while the slightly perfumey cardamom makes for an exotic flavor combo. We know chocolate is always a winner, but this is a slightly lighter and (dare we say) more interesting way to end dinner.

INGREDIENTS

3 large eggs

1 cup granulated sugar

1 cup milk

¾ cup extra virgin olive oil

1 tablespoon fresh orange juice

2 tablespoons orange zest, grated

1 ½ cups all-purpose flour

½ cup cornmeal

1 teaspoon baking powder

1 teaspoon ground cardamom

5 orange slices, sliced

Confectioner’s sugar for dusting

PREPARATION

STEP 1

Preheat oven to 350 degrees. Grease a 9-inch round cake or springform pan.

 

STEP 2

In a large bowl, whisk together eggs and sugar until blended. Add milk, olive oil, orange juice, and orange zest.

 

STEP 3

In another large bowl, combine flour, cornmeal, baking powder, and cardamom. Add the egg mixture into the flour and stir until just combined. Pour batter into the prepared cake pan and top with orange slices. Bake for 45 to 50 minutes or until a toothpick inserted into the center comes out clean. Transfer to a wire rack to cool completely.

 

STEP 4

Before serving, dust with confectioner’s sugar. Slice and serve.
