INGREDIENTS

4 large eggs

½ cup granulated sugar

1 cup heavy cream

2 teaspoons vanilla extract

¼ teaspoon salt

6 tablespoons all-purpose flour

2 ripe Bartlett pears, peeled, cored, and sliced thin

PREPARATION

STEP 1

Preheat oven to 375 degrees. Butter a 10-inch round or oval baking dish.

 

STEP 2

Using a hand-held or stand mixer with a paddle attachment on medium-high speed, beat eggs and sugar until light and fluffy, about 3 minutes. Reduce speed to low and add cream, extract, and salt. Add flour and mix until just combined.

 

STEP 3

Arrange pear slices in the bottom of the dish and pour batter over the pears. Bake until lightly golden and firm, about 35 to 40 minutes. Serve warm or at room temperature.
