BEER PAIRING

Pair with an American IPA, like Terrapin Hopsecutioner®

This hoppy, citrusy IPA is a great complement to the cilantro and green chili in this dish.

LEARN MORE

Spice up your cheesy dip with a bit of jalapeño and green chili, topped off with some hearty ground chuck. The Terrapin Hopsecutioner balances out the rich dip with a crisp hoppiness and slightly sweet malty flavors.

Topics:
Appetizers, Beef, Latin American, Fall, Winter

INGREDIENTS

½ lb. ground chuck

8 oz. American processed cheddar cheese

2 oz. Monterey Jack cheese, shredded

2 4-oz. can green chilies

½ ts. chili powder

½ ts. cumin

Diced tomatoes, sliced jalapeños, cilantro, for garnish

PREPARATION

STEP 1

In a large non-stick skillet over high heat, brown the beef until cooked through, about 5 minutes. Transfer to a plate.

STEP 2

Reduce heat to medium-low, add cheeses and cook, stirring often, until cheese is melted. Add ground beef, chilies, chili powder, and cumin; stir. Pour into a heated ceramic bowl, top with a few diced tomatoes, sliced jalapenos, and cilantro, and serve with tortilla chips.
