BEER PAIRING
Pair with a Hard Cider, like Crispin® Hard Apple Cider
The fresh pressed apples in Crispin® Apple Cider add layers of complexity that work deliciously well with this dish.
Crispin® Original's fresh pressed apple aroma helps highlight the crispness of the greens and carrots, and its sweet/tart balance complements the sweet and savory hoisin sauce.
The sweetness of the cider contrasts the earthy, herbal spices to brighten up the dish, and the cider's delicate balance is the perfect match for the flavor intensity of the tuna.
INGREDIENTS
Hoisin Vinaigrette
1 tablespoon hoisin sauce
2 teaspoons rice vinegar
1 teaspoon toasted sesame oil
1 teaspoon honey
1 teaspoon soy sauce
Sesame Ahi Tuna Salad
4 cups mixed spring salad greens
2 cups shredded carrots
½ cup green onion, sliced thin
¼ cup mint, torn into small pieces
¼ cup basil, torn into small pieces
¼ cup cilantro leaves
½ cup white sesame seeds
½ cup black sesame seeds
4 3-ounce ahi tuna steaks, about 1-inch thick
1 teaspoon kosher salt
½ teaspoon ground black pepper
2 tablespoons canola oil
PREPARATION
STEP 1
To create the vinaigrette, combine all ingredients in a bowl and whisk until emulsified.
STEP 2
In a large bowl, toss to combine salad greens, carrots, green onions, mint, basil, and cilantro. Add half of the vinaigrette and toss to combine.
STEP 3
Season steaks with salt and pepper. Combine sesame seeds on a plate. Press steaks into the seeds coating all sides. Heat oil in a large skillet over high heat until hot. Place steaks in skillet and sear 1 minute a side. Remove steaks to a carving board and slice into thin strips.
STEP 4
Divide salad onto serving plates and top each with tuna. Drizzle remaining vinaigrette over tuna and serve.
Note: Vinaigrette can be made in advance. Vinaigrette has sesame oil and can be a tree nut allergy risk. The tuna is considered raw, so the freshest, high-quality tuna is recommended.
