
Steak Bites with Horseradish Sauce

INGREDIENTS
Horseradish Sauce
1 cup sour cream
¼ cup horseradish, grated
1 tablespoon Dijon mustard
1 tablespoon mayonnaise
2 teaspoons lemon juice
½ teaspoon salt
¼ teaspoon black pepper
Steak Bites
2.5 pounds (about 2 steaks) sirloin steak, trimmed
1 teaspoon kosher salt
½ teaspoon black pepper
1 tablespoon canola oil
2 tablespoons butter
4 sprigs fresh thyme
3 cloves garlic, peeled
PREPARATION
STEP 1
In a bowl, combine ingredients for the horseradish sauce and stir until smooth.
STEP 2
Slice steaks into 1-inch cubes and season with salt and pepper. Divide the steak cubes in half.
STEP 3
Heat oil in a large skillet over high heat. Once the oil begins to smoke, add one half of the steak cubes and sear for 1 minute until browned. Stir and sear for an additional minute until browned.
Remove steak bites to a serving dish and repeat with the remaining steak.
STEP 4
Reduce heat to medium-low and add butter, thyme, and garlic. Sauté, scraping the bottom of the pan with a wooden spoon, until butter melts and garlic is golden.
STEP 5
Pour over the steak bites and serve with horseradish sauce.
