INGREDIENTS

Artichoke Hearts

10 slices bacon

½ teaspoon ground black pepper

20 (2 cans) artichoke hearts  

 

Lemon-Garlic Sauce

½ cup mayonnaise

1 tablespoon lemon juice

1 clove garlic

PREPARATION

STEP 1

Preheat oven to 425°F.

 

STEP 2

Slice bacon in half and season with pepper. Strain water from artichokes and gently squeeze each artichoke to remove any excess liquid. Wrap each artichoke heart with a half slice of bacon and secure with a toothpick. Place on a rimmed baking sheet.

 

STEP 3

Bake for 25 minutes until bacon begins to render then broil for 5 to 8 minutes until bacon is deeply golden and slightly crisp.

 

STEP 4

Place ingredients for the lemon-garlic sauce in a blender and puree until combined.

 

STEP 5

Serve bacon-wrapped artichokes promptly with lemon-garlic sauce.

 

Note: Bacon-wrapped artichoke hearts can be prepared but not cooked in advance. Cook right before serving.
