INGREDIENTS
Chimichurri
½ cup parsley, chopped
1 tablespoon lemon zest
1 garlic clove
1 tablespoon chopped oregano
1 teaspoon red wine vinegar
½ teaspoon red pepper flakes
¼ teaspoon kosher salt
½ cup extra virgin olive oil
Chicken kebabs
3 chicken breasts, cubed in 24 pieces
2 large zucchinis, sliced in ½-inch-thick rounds
2 tablespoons canola oil
1 teaspoon kosher salt
Bamboo or metal skewers
PREPARATION
STEP 1
In a food processor, combine all ingredients for the chimichurri and pulse until everything is minced and combined.
STEP 2
Preheat grill to medium-high heat.
STEP 3
Toss chicken and zucchini with oil and skewer on bamboo or metal skewers. Season with salt and grill for 4 minutes per side or until chicken is cooked through. Transfer to a serving plate and serve with chimichurri.
